Beer Battered FishIngredients

  • 6 firm fish fillets
  • 1½ cup white flour
  • 1 cup corn flour
  • 2 tsp baking powder
  • 2 tsp salt
  • 2 eggs
  • ¾ cup Beer (Ale is best)
  • ½ cup milk
  • Oil for frying

Method

  1. Preheat the deep fryer to 180ºC. (A pan filled with hot oil is an alternative.)
  2. Mix the two flours, the baking powder and the salt together.
  3. In another bowl, lightly beat the eggs then add the beer and milk and mix well.
  4. Slowly combine the wet ingredients with the dry ingredients so that there are no lumps in the batter.
  5. Dust the fish fillets in some extra flour then one by one, submerge the fillets into the batter.
  6. Shake a few batter drips off and drop into the deep fryer, no more than three at a time.
  7. Fry the fillets for 2 – 5 minutes depending on the thickness of the fillets.
  8. If using a pan of oil, the fillets need to be turned over halfway through frying.
  9. Serve with wedges of lemon and tomato or Tartare sauce.
