  • 1.5kg whole fish, cleaned & gutted
  • 1 tsp salt
  • 2 Tbsp lemon juice
  • 2 onions, sliced
  • 3 cloves garlic, crushed
  • 2 Tbsp olive oil
  • 1 green bell pepper, seeded and sliced
  • 1 red bell pepper, seeded and sliced
  • 1 tsp ground turmeric
  • 1 tsp curry powder 5-6 small tomatoes, chopped
  • 2 Tbsp tomato sauce
  • 2 Tbsp fresh cilantro or parsley, chopped
  • 100g slivered almonds


  1. Rub fish with salt and prick several times on each side with a fork then place fish in a dish and squeeze lemon juice over it and leave for 2 hours.
  2. Preheat oven to 180°C.
  3. In a pan, cook the onions and garlic in the olive oil until soft.
  4. Add the bell peppers, turmeric and curry powder and cook gently for several minutes.
  5. Stir in tomatoes, tomato sauce and chopped cilantro or parsley.
  6. Cook for another minute or so then take the pan off the heat.
  7. Scatter half the almonds in a baking dish large enough to hold the whole fish.
  8. Put half the sauce into the baking dish and then the fish and its marinade then spoon the remaining sauce over the fish.
  9. Sprinkle with the remaining almonds and cover the dish tightly with foil.
  10. Bake in oven for 30 minutes.
  11. Remove foil and bake another 10-20 minutes.
  12. Serve immediately.
