Delicious fish
Ingredients
- 1.5kg whole fish, cleaned & gutted
- 1 tsp salt
- 2 Tbsp lemon juice
- 2 onions, sliced
- 3 cloves garlic, crushed
- 2 Tbsp olive oil
- 1 green bell pepper, seeded and sliced
- 1 red bell pepper, seeded and sliced
- 1 tsp ground turmeric
- 1 tsp curry powder 5-6 small tomatoes, chopped
- 2 Tbsp tomato sauce
- 2 Tbsp fresh cilantro or parsley, chopped
- 100g slivered almonds
Method
- Rub fish with salt and prick several times on each side with a fork then place fish in a dish and squeeze lemon juice over it and leave for 2 hours.
- Preheat oven to 180°C.
- In a pan, cook the onions and garlic in the olive oil until soft.
- Add the bell peppers, turmeric and curry powder and cook gently for several minutes.
- Stir in tomatoes, tomato sauce and chopped cilantro or parsley.
- Cook for another minute or so then take the pan off the heat.
- Scatter half the almonds in a baking dish large enough to hold the whole fish.
- Put half the sauce into the baking dish and then the fish and its marinade then spoon the remaining sauce over the fish.
- Sprinkle with the remaining almonds and cover the dish tightly with foil.
- Bake in oven for 30 minutes.
- Remove foil and bake another 10-20 minutes.
- Serve immediately.
