Shrimp Cocktail with Avocado SauceIngredients

  • 500g Shrimp, cooked and peeled
  • ½ cup water
  • ½ cup white vinegar
  • 2 tsp salt
  • 1 clove garlic, crushed
  • 2 ripe avocados
  • 2 tsp lemon juice
  • 3 Tbsp Thousand Island sauce
  • 1 tsp salt
  • 1 tsp black pepper


Mix together the water, vinegar, salt and garlic then marinate the shrimp in the mixture for 2 hours or more.
Mash the ripe avocados and add the lemon juice, Thousand Island sauce, salt and pepper to make a thick and creamy sauce.
Drain the shrimp and divide amongst 4 cocktail glasses.
Top the shrimp with the avocado sauce and garnish with a wedge of lemon or a sprig of parsley.
