Filleting a Fish

Step 1 - Make a cut behind the gills, right in until you hit bone.
Step 2 - Cut down the backbone of the fish.

Step 3 - Unzip the fillet from the ribcage.
Step 4 - Cut the fillet away from the carcass.

Filleting a Fish

Step 5 - Start again on the other side of the fish. Cut in behind the gills.
Step 6 - Cut down the backbone, this time starting at the tail. (Due to right-handed filleting.)
Step 7 - Unzip from the ribcage.
Step 8 - Cut the fillet away from the carcass.
Filleting complete.
