Sesame Oysters

Sesame OystersIngredients

  • Pacific Oysters – lots
  • 1 can beer (Ale is best)
  • 3/4 cup flour + more for dusting
  • 3/4 cup cornflour
  • 1/2 cup sesame seeds
  • 1 tsp salt
  • Oil for frying

Method

Drain oysters from the liquid and place to dry on a paper towel.
Pour the beer into a bowl and add the two flours in even amounts until the desired batter thickness is attained.  (Not all the flour has to be used)
Add the sesame seeds and the salt and mix well.
Heat the oil in a wok or frying pan until very hot.
Dust the oysters in a little flour and completely submerge them in the beer batter.
Allow a bit of batter to drip off before transferring into the hot oil in the pan.
Fry evenly for 2 – 3 minutes each oyster.
Drain off the excess oil by placing on a paper towel.
Serve hot with lemon wedges and/or sweet chilli sauce.
